OND 2018: RESULTS & PROSPECTS

OND’s third edition, held January 16-20, gathered international producers, Chefs and olive oil experts coming from Spain, Brazil, Italy, Japan and Turkey, who landed in Paris to represent the twenty-two selected EVOOs of 2018.

‘OND’s innovative parcours allows us to share experiences with different influencers while placing the product in high-end markets with the support of professional tasters, traders and celebrity Chefs,’ said Pasquale Marino, President and COO at Bona Furtuna, an Italian mill from Sicily.

‘Bona Furtuna benefited from a positive experience in all aspects; from the promotion of the brand, to its origin, farm story and quality.’

Behind what we’ve long considered to be a simple seasoning lies an entire universe full of complexities. During the one-week parcours, OND demonstrated and demystified to the public a wide range of characteristics, not otherwise known by non-experts, surrounding bitterness, aromas, analogue descriptions as well as the kinesthetic and tactile sensations an olio nuovo reveals.

Casitas de Hualdo, a bottle exclusively designed for children, covered in drawings and child-like handwriting, created by the Spanish mill Casas de Hualdo, was a big success during tastings in Panifica bakery and at the Arnaud Larher Laboratory workshop.

‘I smell green apples,’ successfully noted a five-year-old while tasting the innovative green fruity. A child’s palate is often unfairly under-estimated just as their culinary interests. It is therefore unarguable that Cristina Aizpún, export manager at Casas de Hualdo, believes that introducing olive oil to the littles ones through ludic workshops contributes to an educational project which will be ‘the basis of future EVOO development.’

‘Being able to taste an olio nuovo while being guided by experts in the field is an important opportunity to discover the fascinating world of olive oils. Add to that the pluri-disciplinary aspect of the parcours which highlights EVOOs natural incorporation in various fields: high-end gastronomy, the initiation of a healthy product to children, the innovative use of an extra-virgin olive oil in bakeries and even in art – all demonstrating the versatility of this juice,’ said Aizpún.

A versatility well proven at La Closerie des Lilas restaurant by Pastry Chef William Lamagnère who created several different deserts using the selected oils.

Nicolas Fortchantre, owner of the delicatessen store Jeune Homme, welcomed the Japanese Toyo Olive producer, Mrs. Yasuko Minami, and Mr. Toshiya Tada, president of the Japanese Association of Olive Oil Sommelier, for an exclusive tasting of their latest produce in his chic-seventh-district store.

Also, a different aspect of the parcours consisted in three instructive conferences held by experts in their field: bitterness, a (dis)liked taste; black fruity: a French typicality; and the olive tree: from the Mediterranean basin to Japan.

The conference on the black fruity was held by OND’s new partner, the French Olive Interbranch Association (AFIDOL) whose president, Olivier Nasles, also member of the jury panel, gave an insightful presentation on the controversies behind the olive oil produced from ripened olives and its misinterpreted taste.

‘The black fruity is our DNA, our historical heritage,’ said Nasles who finds unfairly prejudicial the general disdain for this ancestral tradition which he believes is the root of what is today known as the green fruity.

The parcours closed with the results of an international extra virgin olive oil contest, a first of its kind with a jury composed of olive oil experts grouped with amateurs in the premises of Maison de la Métropole Nice Côte d’Azur.

The progressive success of this three-year-old concept has appealed other olive oil ambassadors who are considering exporting the idea to their cities. In 2019, Madrid will organize its first edition of Olio Nuovo Day, in collaboration with Mercacei publishing group.

‘The Third Edition of Olio Nuovo Days will henceforth guarantee a primordial place in yearly events, in collaboration with expanding international cooperation,’ said the founder, Emmanuelle Déchelette, who sees ‘bright prospects for 2019 with a promotion campaign taking place in December, for the producers.’

C’est à une expérience hors du commun que 20 Minutes convie l’un(e) d’entre vous : fêter les Olio Nuovo days, journées dédiées à l’huile d’olive nouvelle, à la table gastronomique de l’étonnant chef d’origine libanaise, Alan Geaam.

L’huile d’olive nouvelle ? Comme pour le vin du Beaujolais, elle est issue des toutes dernières récoltes, fraichement pressée, pimpante et pleine de saveurs… Produite dans le monde entier, mais en faible quantité, le plaisir de la déguster ne durera pas. Emmanuelle Dechelette, fondatrice des Olio Nuovo days, insiste sur les qualités gustatives des huiles nouvelles « plus intenses et typées », ainsi que sur leurs « propriétés antioxydantes qui ne se perdent pas à la cuisson ».

Alan Geaam, de son côté, est un chef d’origine libanaise, né au Libéria, qui débarqua en France un jour du 2 mars 1999 sans aucun diplôme en poche mais avec la volonté farouche de réussir dans la cuisine française qu’il admirait pour sa perfection. « Je ne connaissais personne à Paris, reconte-t-il à 20 Minutes. J’avais 200 francs en poche et mon sac à dos, j’ai commencé à gagner ma vie en travaillant dans le bâtiment, puis comme plongeur dans les restaurants. »

A force de pugnacité, en apprenant la cuisine dans les livres puis en affûtant sa technique et en faisant son trou dans des cuisines de brasseries ou de bistrots, il a fini par ouvrir dix-huit ans plus tard, en mars 2017, la table gastronomique dont il rêvait et qui porte son nom, rue Lauriston, à Paris (16e).

Taboulé noir et eau de tomate

Pour l’avoir testée l’été dernier, on peut dire que c’est une réussite intégrale. Tout est succulent, chez l’étonnant et très sympathique Alan Geaam. A 20 Minutes, nous avions alors été particulièrement éblouis par le goût très simple, très net et très frais d’un taboulé noir arrosé d’une eau de tomate…

Cette fois, tant dans son resto gastro que son bistrot, AG Les Halles, le chef d’origine libanaise va mettre à l’honneur l’huile d’olive nouvelle d’un producteur turc « au goût corsé, car provenant d’oliviers millénaires », mais « qui n’est pas intrusive et laisse de la place aux autres saveurs dans un plat ». Une huile nouvelle sicilienne, et une autre  tunisienne, assaisonneront d’autres plats.

Pour notre déjeuner «A Table avec 20Minutes», il prévoit un carpaccio de langoustines qu’il va « mariner dans cette huile nouvelle et servir avec un peu de caviar ». Puis viendra « un poisson qui pourrait bien être une sole », une de ses spécialités du moment, qu’il accompagnera d’un espuma d’huile d’olive nouvelle avec du pamplemousse et du café…

Difficile à imaginer, même si une de ses dernières créations avec de la sole donnait ça :

Et en dessert ? « Je vais sans doute travailler l’huile nouvelle avec du chocolat, le résultat devrait être intéressant… »

Chefs Akrame Benallal and Johanna Lepape seduced by Tunisian EVOO, Segermès

For its second year participating in OND parcours, Domaine de Segermès EVOOs were selected by Michelin-starred Chef Akrame Benallal and World Champion Pastry Chef Johanna Lepape.

Chemlali Segermès is a mild fruity green, extracted with a main variety of citrus fruit farmed in Tunisia, the clementine Cassar. The juice is produced with Chemlali olives which were pitted with a destoner. ‘It was the fruit of several attempts to finally reach a harmonious and balanced blend between the citrus and the oil,’ said Mounir Boussetta, the producer and owner of Domaine de Segermès.DOMAINE DE SEGERMES BELDI

Chemlali is the most spread cultivar in Tunisia but its taste differs from region to region. Just like wine, extra-virgin olive oil will vary in flavor depending on the type of soil and the pluviometry.‘This year, the Chemlali is magnificent because of the abundant rainfall from last year. It reveals notes of artichoke and tomato, with a light bitterness and a hint of pungency,’ added Boussetta.

The Tunisian oil will be the star ingredient in a cake baked by Chef Johanna Lepape, the young Breton who was awarded, in 2014, World Champion of Pastry by the prestigious Mondial des Arts Sucrés in Paris. The cake “gâteau de voyage” will be served at GreenHouse healthy eatery, on January 16th.

Beldi/Chetoui EVOO will be the darling ingredient on Chef Akrame Benallal’s dinner menu at his eponymous, contemporary French restaurant, on January 19th.

Chetoui Segermès is an intense green fruity with notes of freshly-cut grass and green apple. This fragrant oil is spicy, with a well-balanced bitterness and pungency.

Greek EVOO Oli Tina joins GreenHouse eatery

Also served at GreenHouse and for the whole week of the parcours will be tapas dishes elaborated with the Greek Oli Tina EVOO. This medium fruity green is produced from Koroneiki olives of the Cythera island, located off the southern coast of the Peloponnese. It has a balanced bitterness and pungency with notes of artichoke.

Ferrandi’s culinary art school graduate Kristin Frederick pioneered the Gourmet food truck trend in Paris when she launched, in 2011, Le Camion qui Fume, now settled at Rue Montmartre.

Today, the Californian Chef owns and runs her charming product-centric GreenHouse, where she proposes healthy bites made with fresh bio products and natural wines. Not only does she carefully select her products directly from the small producers, but she also grows her own vegetables and fruits in her urban garden, at the entrance of the restaurant.

Oli Tina EVOO was also selected by Christian Schuller, Chef at the Paris’ bar association, la Maison du Barreau.

Conversations around a Four-Hand Dinner at AG Les Halles

This coming January 16, Chef owner Alan Geaam will present a four-hand dinner with visiting Chef Sommelier Perola Polilo from Brazil, at one of his Parisian restaurants, AG Les Halles.

The five-course set menu will be inspired around the olio nuovo Bona Fortuna, Kisthene 0,2 and Moulins Mahjoub. The dinner will be spirited by a fascinating talk about tannins in olive oils. Tannins are naturally occurring compounds that exist inside seeds. Scientifically known as polyphenols, they are what give olive oil their characteristic.

‘This characteristic appears in flavors such as bitterness’, explained the Brazilian Chef, Perola Polilo. ‘So, it’s important to speak about this to demystify the controversy around bitter oils, often judged as not good or expired. The consumer who does not know these characteristics, interprets wrongly the bitter taste coming from the tannin.’

Polilo is the remarkable Chef of Casa de Perola restaurant in Rio de Janeiro. She’s also the first woman in the world to be Sommelier of both wine and olive oil.

‘Being the first woman holding such a title makes me so proud, because unfortunately, in our profession we still suffer from a lack of promotions and financial rewards due to gender inequality.’

The Chef said to have found her passion for olive oil the second she enrolled in the Sommelier course at Olive Oil Times (New York). She studied wine and olive oil to be able to offer her customers information besides food.

‘Today, to stand out, it’s important to know where a product comes from and how it is made. I love to think of how the producer takes care of the mill, or the beauty of harvesting and extracting. But the loveliest thing is to cook and taste all the possibilities a same ingredient can reveal just by changing the olive oil.’

She likes to combine soft EVOO with desserts, robust ones with red meats and vegetables and the medium oils with fish and chicken. ‘Although, ideally, the best way is to taste the olive oil and start a process of flavor investigation,’ she added.

Hooked on knowledge, her next step will be to become a Sommelier of Tea. Impressive!

Self-taught and well-travelled Alan Geaam, is a French Chef born to Lebanese parents in Liberia. Today, he marvelously segues between his four restaurants: L’Auberge Nicolas Flamel, AG Saint-Germain, AG Les Halles and Restaurant Alan Geaam, which opened last year.

The Chef appreciates pungent oils with character as he’s used to intense flavors such as garlic, onion and spices, used daily in Mediterranean meals. ‘I like an oil full of pep that reinvigorates the palate.’

Inspired by the three EVOO they selected for the parcours, Geaam and Polilo will prepareaLabneh (popular Lebanese cream cheese) with thyme, followed by a Brazilian style ceviche,

an oeuf parfait with veggies and a Cod fish with a Brazilian touch. To wrap up this sophisticated explosion of flavors, a chocolate mousse with citrus notes.

‘Olive oil? Olive oil is life. I grew up in a home where olive oil does everything: cure a stomach pain, moisturize, fry food… I’d never tasted butter until I started working in French cuisines,’ said Geaam, in an obvious tone.

Paris’ gastronomic Temple Lucas Carton pays tribute to Japanese EVOO

For its third edition, Olio Nuovo Days Paris is launching a series of gourmet dinners at the most sophisticated restaurants of the French capital. From January 16 to 20, celebrity chefs will create their menu around the darling ingredients of this one-week parcours; premium EVOOs from ten different countries.

This year, Japan is the honorary country of OND and for the first time in Europe, their green gold is used in a restaurant outside of the island.

On January 18th, the Michelin-starred chef, Julien Dumas, of the gastronomic institution Lucas Carton, will prepare a four-course dinner to salute the delicacy of Japanese EVOO, Toyo Olivo.

Present at this one-night only exceptional diner will be the President of the Olive Oil Sommelier Association of Japan, Mr. Toshiya Tada; the President of Toyo Olive Co., Mrs. Yasuko Minami, OND’s founder, Emmanuelle Déchelette and other olive oil experts and aficionados.

Dumas will create his dishes around four different oils from Toyo Olive’s orchard: early harvest TOLEA, handpicked exclusive TOLEA, 100% House orchard and Teshima Island limited.

Founded in 1955, Toyo Olive grows four varietals on the island of Shōdoshima, located in the Seto inland Sea of Japan, where the Mediterranean-like climate is perfectly suited to olive production. The main cultivar is the Mission olive followed by Lucca, Manzanillo and Nevadillo Blanco.

Traditionally known for its big fishing industry, Japan has had a history with olive oil for over a hundred years when the government planned to procure the botanical oil for fish can products. After various oil seeds cultivation attempts, olive was a big candidate.

Despite many obstacles to grow the fruit due to huge rain, high humidity and a serious presence of insects; Shodoshima island was the only successful area to grow olives.

But Japan’s olive oil market started expanding in 2009 after one of the most famous and major consumed cooking oil brand, ECONA, suffered a huge scandal and had to remove themselves from the market for having artificially refined the oil.

This scandal has sparked the rise of health-conscious consumers who switched from buying “Econa” to buying olive oil. As people were more actively checking their food labels, this shift in consumer purchasing also applied to EVOO bottles. This lead Japanese farmers to reach high-quality production in a market that prizes quality and the value of brand.

Japan is the fourth importing country of olive oil but does not export yet, as their annual production volume totals to only 400 metric tons per year.

‘Our participation in Olio Nuovo Day’s parcours is a very good opportunity to encourage the small Japanese producers and may contribute to expand their market in foreign countries,’ said Mr. Tada.

‘It is our duty to promote beautiful-minded, high-quality producers whether they’re Spanish, Italian or Japanese. We are happy to share fine extra virgin oil with the people of the globe.’

Mr. Toshiya Tada and Ms. Emmanuelle Déchelette will be holding a conference at Le Cordon Bleu School on the 17th. They will discuss the typicalities of the EVOO of the parcours, from the Mediterranean basin to Japan. Tastings will take place in the presence of producers Yasuko Minami, Marina Gioacchini and Olivier Borrat to discover the organoleptic analysis of each oil.

París ultima los preparativos de Olio Nuovo Days, la primera gran cita gastronómica del año para descubrir el aceite de oliva virgen extra más fresco en restaurantes, panaderías y otros centros gastronómicos de la capital francesa, que se celebrará entre el 16 y el 20 de enero.

En esta tercera edición, Japón será el país invitado a la cita, que ofrecerá un recorrido apasionante para que los amantes del AOVE descubran los zumos de España, Italia, Grecia, Francia y de otras regiones. Cada punto de degustación constituirá un pretexto para descubrir el aceite de oliva virgen extra excepcional en su expresión más fresca, a través de diferentes chefs, talleres de cata y otras actividades.

Maridaje de AOVEs

La impulsora de Olio Nuovo Days, Emmanuelle Dechelette, ha adelantado en exclusiva a Mercacei que en la programación está prevista la participación de Toshiya Tada, presidente de la Asociación de Sumilleres de Japón y organizador del Concurso Olive Japan, que presentará el AOVE japonés Toyo Olive.

Este zumo será utilizado por el chef Julian Dumas en su restaurante Lucas Carton. Es la primera vez que se realiza en un restaurante de occidente una cena maridada solo con AOVEs japoneses.

Los AOVEs de Henri Mor se emplearán en Le Chamarré Montmatre en una cena a cuatro manos a cargo de los chefs Antoine Heerah y María José San Román (1 estrella Michelin, El Monastrell – Alicante)

La chef María José San Román, en declaraciones a Mercacei, ha considerado un “orgullo” participar en esta iniciativa gastronómica y ha desvelado detalles del “reto” que asumirá con una receta de salsa bearnesa que elaborará en París con AOVE arbequino de Henri Mor.

Se trata, según ha explicado, de “una receta clásica francesa realizada tradicionalmente con mantequilla, pero que dará la talla” con esta nueva elaboración que incorpora aceite de oliva virgen extra. “No va a haber ningún francés que diga que esta salsa no es tan buena como la clásica elaborada con mantequilla”, ha destacado la reconocida chef.Además, ha avanzado que preparará un helado en el que no utilizará ni azúcar ni mantequilla, sino AOVE hojiblanco y miel, con el que pondrá en valor que “nuestro aceite es perfectamente competitivo” en los fogones con otro tipo de grasas de origen animal.

Por otro lado, los AOVEs de O-MED serán utilizados por el chef William Lamagnère en La Closerie des Lilas.

Nuevos usos del virgen extra

La tercera edición de Olio Nuovo Days, además de incorporar los mejores AOVEs del mundo a las cocinas de los chefs más influyentes de París, también descubrirá otros usos del zumo de aceituna como los masajes con aceite fresco o la pintura con aceite de oliva, entre otras muchas sorpresas.

Emmanuelle Dechelette, en una reciente entrevista con Mercacei, asegura que creó este evento ante el desconocimiento por parte de los consumidores de los criterios de calidad aplicables a este producto tales como las características organolépticas, el origen de la cultura oleícola y su proceso de obtención. Por ello, Olio Nuovo Days busca poner en valor el trabajo de los productores tanto franceses como internacionales y promocionar la excelencia del AOVE.

Dechellete ha detallado los objetivos de este evento, las novedades de su próxima edición, qué productores pueden participar y las claves de su éxito. Entre ellos destacan los siguientes: ayudar al consumidor a encontrar su camino en una oferta cada vez mayor de aceite de oliva; expandir y democratizar el conocimiento del AOVE; promover la colaboración entre los productores y los chefs, ya que son personalidades influyentes para el público en general; y convertirse en la primera reunión del año para profesionales y aficionados al zumo de aceituna.Olio Nuovo Days brinda respuestas a los consumidores, profesionales o no. La oferta de aceite de oliva ha crecido considerablemente para satisfacer una demanda existente, pero el consumidor aún tiene la paradoja de la elección, ha explicado.

Esta iniciativa se estrenó en 2016 durante un solo día, aunque debido al éxito de la primera edición y ante la demanda creciente de público, la edición de 2017 se prolongó durante una semana. En cifras, un total de 20.000 personas participaron en las degustaciones llevadas a cabo en las tiendas delicatessen y contó con 50.000 participantes directos (que acudieron a los restaurantes para degustar las recetas) e indirectos (seguidores de los chefs en los medios sociales, blogs que generaron nuevos prescriptores).

Un solo dia no era suficiente has apreciado Olio Nuovo Days 2 : toda una semana para descubrir el frescor del aceite de oliva nuevo con todavia mas chefs talleres de cata y otras actividades. CHOISIR SON HUILE D’OLIVE : IDÉALEMENT (PARTIE 1)

COMMENT CHOISIR SON HUILE D’OLIVE ? Dans cette première partie, supposons que nous sommes dans un monde idéal, chez Kilikio, Profil Grec,  Rap Epicerie ou encore l’AVPA. Ce monde idéal  s’épanouira prochainement sur une page dédiée aux bonne adresses en France et dans le monde…

1/ IDEALEMENT, vous devez pouvoir goûter l’huile d’olive que vous achetez. COMMENT GOÛTER L’ HUILE D’OLIVE ? A la cuiller ou dans un petit verre. Si cela vous semble peu engageant, pensez que l’huile d’olive est aussi un jus de fruit.

LE FRUITE, L’AMERTUME & L’ARDENCE sont les 3 critères à considérer lorsque que vous allez “slurper” (le fameux «stripaggio » en italien qui est une aspiration intense destinée à tapisser la bouche et à envoyer vers le nez les informations nécessaires à “la rétro-olfaction” qui aide à définir ce que l’on appelle le goût).

La couleur n’est pas un critère de goût ni de qualité, c’est un critère certes important mais purement esthétique.

Le fruité, l’amertume et l’ardence sont à prendre en compte dans leur équilibre ou avec la prédominance qui vous séduira. Ce que l’on appelle le fruité est ce que l’on sent par le nez et par la rétro-olfaction, c’est aussi ce qui qualifie le type d’huile à laquelle on a affaire : verte, mûre (“subtile” dans sa nouvelle appellation) ou à l’ancienne (on ne dit plus fruité noir).

le fruité vert provient d’une huile produite avec des fruits récoltés très tôt, cela donne des notes très fraiches et herbacées. le fruité mûr ou subtil apporte des notes plus douces, plus rondes, et le fruité à l’ancienne rappelle le fruit confit, la tapenade (c’est un fruité spécifique, que l’on trouve plus particulièrement dans le sud de la France).

L’amertume est une qualité qui nous est peu familière (sauf si l’on est amateur de bière ou d’endives cuites), elle contribue à l’équilibre de l’huile d’olive. Pour mieux comprendre ce critère, on peut penser à l’odeur de feuilles d’artichauts. 

L’ardence Ce piquant en gorge, surtout présent en début de saison ou avec certaines variétés (comme la Picual) est un attribut positif, un signe de haute teneur en polyphénols. Certaines huiles sont qualifiées de « une, deux ou trois toux » pour qualifier leur intensité présente surtout lorsqu’elles sont fraiches. Ces huiles intenses apportent de la vigueur aux plats qu’elles assaisonnent, elles peuvent même dispenser de poivre.
